🥞 Light pancakes with baked peaches

Preparation:

In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.

In another bowl, combine the buttermilk, egg, and melted butter.

Add the wet ingredients to the dry ingredients and mix briefly – the batter should stay thick, and small lumps are okay.

Melt some butter in a pan. Pour in some batter, arrange 2-3 peach slices on top, and gently press in, then cover with a thin layer of batter.

Fry at medium heat for about 2-3 minutes until small bubbles appear. Turn over and cook for another 1-2 minutes until golden brown.

Stack the finished pancakes, dust with powdered sugar, and drizzle with honey or maple syrup, if desired.

💡 Tip: They taste especially delicious when the peaches are lightly caramelized.
