🧅🥓 Tarte flambée roll with puff pastry – crispy, spicy & made in a flash!

Unroll the puff pastry sheet on a lightly floured surface (or on the parchment it comes with). Gently stretch it if needed to get a thin, even layer.

Spread the base:
Evenly spread crème fraîche over the surface, leaving a 1/2-inch border along one long edge to seal the roll.

Top with goodies:
Scatter thinly sliced onions and bacon evenly over the crème fraîche. Season with pepper and optional spices.

Roll it up:
Starting from the long edge opposite the border, roll the pastry up tightly like a jelly roll. Press the seam to seal.

Slice:
Using a sharp knife, cut into ~1-inch slices. Place the rolls cut-side up on the baking sheet, spaced slightly apart.

Bake:
Bake for 20–25 minutes, until puffed and golden brown. The edges should be crisp, and the bacon cooked through.

Serve:
Garnish with chopped chives or fresh thyme if desired. Serve warm or at room temp — they’re delicious either way!

🔁 Variations:
Vegetarian: Swap bacon for caramelized onions or sautéed mushrooms.

Spicy kick: Add chopped chili, hot paprika, or a smear of mustard in the base.

Mini version: Cut smaller slices for party-friendly appetizers.
