🧀 Ricotta Roll with Broccoli and Mushrooms
Ingredients:
For the Dough (optional if using puff pastry or store-bought dough):
2 cups all-purpose flour
1 tsp salt
2 tbsp olive oil
¾ cup warm water (adjust as needed)
For the Filling:
1 cup ricotta cheese
1 cup broccoli florets, chopped small
1 cup mushrooms, finely chopped (cremini, button, or shiitake work well)
1 garlic clove, minced
2 tbsp olive oil or butter
½ cup grated parmesan or pecorino
Salt and pepper to taste
Pinch of nutmeg (optional)
1 egg (for binding)
1 egg (for egg wash – optional)
