This chicken salad is delicious! The best I’ve ever had in my life!

Ingredients:
For the Chicken:

2 large chicken breasts (poached, grilled, or roasted), shredded or chopped

Salt & pepper, to taste

For the Salad:

½ cup mayonnaise (use Duke’s or Hellmann’s for best flavor)

1 tablespoon Dijon mustard

2 teaspoons fresh lemon juice

1 teaspoon apple cider vinegar

1 teaspoon honey (optional, for balance)

1 celery stalk, finely diced

¼ cup red onion or scallions, finely diced

¼ cup toasted pecans or sliced almonds (optional but amazing)

⅓ cup red grapes or dried cranberries, halved (adds sweetness)

2 tablespoons fresh parsley or dill, finely chopped

Salt and pepper to taste
