Preparation:
Preheat the oven to 180°C (Gas Mark 6).
Prepare the apricots: wash, halve, and pit them.
Mix the filling: brown sugar + vanilla sugar + ground almonds + flour + salt. Add the apricots and mix gently.
Line the pan: Roll out the dough into a pan and pour in the filling.
Place the flaked almonds on top.
Egg wash: Brush the edges of the dough with the beaten egg.
Bake: Bake for 30 to 35 minutes, until the pastry is golden brown and the fruit is soft.
Finish: Drizzle with honey (optional), let cool, and serve.
Hint: This cake goes wonderfully with homemade whipped cream or a scoop of vanilla ice cream!
