I didn’t fry them, but I left them in the oven, and they became the best side dish I’ve ever made: trust me, you’ll want to put them everywhere like me!

I must admit: candied cherry tomatoes are one of my kitchen obsessions. I make them as soon as the warm weather arrives, but now I even make them in winter, because they’re so good they can be found everywhere: in pasta, on bruschetta, in salads… and even on homemade pizzas.

The great thing is, you don’t need to be a Michelin-starred chef: just chop, season, and let the oven do the rest. This requires a little patience, as the burgers must be cooked slowly and at a low temperature… so that they become incredibly sweet, almost caramelized, and retain that intense aroma that whets your appetite even while cooking.

500g cherry or date tomatoes

50g sugar (you can reduce it a little if you prefer them less sweet)

2 cloves garlic
