Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a bowl, toss shredded chicken with 1/2 cup barbecue sauce until well coated.
Brush each flatbread lightly with olive oil and place on the prepared baking sheet.
Spread a thin layer of barbecue sauce over each flatbread. Top with mozzarella cheese, BBQ chicken, and red onion slices.
Bake for 10–12 minutes, or until cheese is melted and bubbly and edges are golden brown.
Remove from oven, sprinkle with chopped cilantro, and drizzle with extra barbecue sauce if desired. Slice and serve warm.
