Beef Enchilada Casserole Recipe

Instructions

Prepare the Beef Mixture:

In a skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onions are softened.

Drain excess grease.

Stir in enchilada sauce, black beans, and green chiles.

Simmer for 5–7 minutes, then remove from heat.

Assemble the Casserole:

Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

Place a layer of tortillas on the bottom, overlapping to cover completely.

Spread half the beef mixture over the tortillas.

Sprinkle with half of the cheddar and Monterey Jack cheeses.

Repeat with remaining tortillas, beef mixture, and cheese.

Bake to Perfection:

Cover with foil and bake for 20–25 minutes, until heated through and cheese is bubbly.

Remove foil and bake another 5–10 minutes until cheese is golden and slightly crispy.

Garnish and Serve:

While baking, toss diced avocado with lemon juice.

Once casserole is done, let cool slightly.

Garnish with diced tomato, chopped cilantro, minced jalapeno, and avocado topping.
