Stir in ยฝ cup tomato sauce or enchilada sauce. Simmer for 2โ3 minutes until well combined.
3. Assemble the Enchiladas
Spread a thin layer of enchilada sauce in the bottom of a 9×13 inch baking dish.
Spoon beef mixture into each tortilla, sprinkle with a bit of cheese, then roll tightly.
Place seam-side down in the baking dish.
4. Top with Sauce and Cheese
Pour remaining enchilada sauce over the rolled tortillas.
Sprinkle generously with the remaining cheese.
5. Bake
Cover with foil and bake for 20 minutes.
Uncover and bake another 5 minutes or until cheese is bubbly and slightly golden.
6. Serve
Garnish with chopped cilantro.
Serve with sour cream, sliced avocado, or lime wedges if desired.
