Step 3: In a large bowl, melt the chocolate wafers. Dip each wafer with a fork.
Step 4: Return to the parchment-lined baking sheet and sprinkle with graham cracker crumbs and mini marshmallows.
For other topping options, try colored sprinkles, chocolate chips, mini chocolate chips, or even crumbled chocolate almond bark.
You can also make this recipe using graham cracker squares instead of Ritz crackers. Of course, they’ll be square instead of round!

An incredible no-bake treat, these s’mores cookies are made with buttery Ritz crackers and feature a soft marshmallow filling!

Serves: 36 cookies
72 Ritz crackers, 3 pouches
7-ounce jar of soft marshmallow filling
24 ounces of chocolate-covered gooey wafers
4 sheets of coarsely crushed graham crackers
1/2 cup of marshmallow pieces
Line a baking sheet with parchment paper or aluminum foil. Place 24 Ritz crackers on the baking sheet and add about 2 teaspoons of marshmallow to each cracker. (It’s okay if they slide a little.) See notes.
Place another Ritz cracker on top.
Add your melting wafers to a medium bowl and microwave for 1 minute at 50% power. Stir and heat in 30-second increments until completely melted.
Using a fork, dip the crackers into the melted chocolate and mix until well coated. Tap the bowl with the fork to remove any excess chocolate and return them to the parchment paper.
Add a few crushed graham crackers and a bite of marshmallow on top and let dry.
Repeat with the remaining crackers.
Be sure to remove as much chocolate as possible; too much chocolate can make them slide more easily. If you have trouble sliding them out, you can place them in the freezer for 2 to 3 minutes. You can also top the cookies with mini chocolate chips or sprinkles. You can also simply add marshmallows to each cookie and dip them one by one in the chocolate.
