Make the filling: In a bowl, beat the cream cheese, sugar, and vanilla until smooth. Gently fold in blueberries.
Assemble rolls: Place 1–2 tbsp of filling in the center of each egg roll wrapper. Fold sides in, roll tightly, and seal edges with water.
Fry: Heat oil (350°F / 175°C). Fry rolls in batches until golden brown and crispy, about 2–3 minutes. Drain on paper towels.
