Instructions:
- Preheat Oven: Set your oven to 500°F (260°C).
- Mix Sauce: In a large bowl, combine olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
- Prepare and Bake Potatoes: Cube the potatoes and toss them in the sauce until coated. Save any leftover sauce in the bowl. Spray a 9×13-inch baking dish with cooking spray, add the potatoes, and bake for 45 minutes, stirring every 15 minutes.
- Prep Chicken and Toppings: While the potatoes bake, cut chicken into cubes and toss with the remaining sauce to marinate. In another bowl, combine cheese, bacon, and green onions.
- Combine and Top: Once the potatoes are done, add the marinated chicken to the dish and stir to mix. Evenly sprinkle the cheese, bacon, and green onion mixture over the top.
- Bake to Finish: Return the casserole to the oven and bake 15 minutes, or until the chicken reaches 165°F (74°C) and the cheese is melted and bubbly.
