Chicken & Loaded Baked Potato Casserole – A Must-Try!

Instructions:

  1. Preheat Oven: Set your oven to 500°F (260°C).
  2. Mix Sauce: In a large bowl, combine olive oil, salt, pepper, paprika, garlic powder, and hot sauce.
  3. Prepare and Bake Potatoes: Cube the potatoes and toss them in the sauce until coated. Save any leftover sauce in the bowl. Spray a 9×13-inch baking dish with cooking spray, add the potatoes, and bake for 45 minutes, stirring every 15 minutes.
  4. Prep Chicken and Toppings: While the potatoes bake, cut chicken into cubes and toss with the remaining sauce to marinate. In another bowl, combine cheese, bacon, and green onions.
  5. Combine and Top: Once the potatoes are done, add the marinated chicken to the dish and stir to mix. Evenly sprinkle the cheese, bacon, and green onion mixture over the top.
  6. Bake to Finish: Return the casserole to the oven and bake 15 minutes, or until the chicken reaches 165°F (74°C) and the cheese is melted and bubbly.
