Preheat oven to 375°F (190°C).
Cook the noodles: Boil egg noodles according to package directions. Drain and set aside.
Make the base: In a large mixing bowl, combine the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
Mix it all: Add in the cooked noodles, chicken, veggies (if using), and cheddar cheese. Mix until everything is coated well.
Transfer to baking dish: Pour the mixture into a greased 9×13-inch casserole dish. Sprinkle Parmesan on top.
Add topping: Mix the crushed crackers or breadcrumbs with melted butter. Sprinkle over the casserole.
Bake for 25–30 minutes, or until bubbly and golden on top.
