- Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking pan.
- In a medium bowl, whisk the flour, baking powder, and salt together; set aside.
- In a separate large bowl, beat the softened butter and sugar until creamy and fluffy.
- Add the eggs one at a time, mixing well after each, then blend in the vanilla.
- Slowly incorporate the dry mixture into the wet ingredients, alternating with the milk and brewed coffee—beginning and ending with the dry mixture.
- Spread half the batter into the prepared baking dish.
- Spoon the apple pie filling evenly across the first layer of batter.
- Pour the remaining batter on top, smoothing it gently.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for about 15 minutes before slicing.
- Optional: Dust with powdered sugar or finish with a simple glaze for added sweetness.
