Creamy, Peppery Coleslaw with Cucumbers & Celery

 

Directions

  1. Prepare the Vegetables: In a large mixing bowl, combine the cabbage, cucumbers, celery, and carrots.
  2. Whisk the Dressing: In a separate bowl, mix the mayonnaise, apple cider vinegar, Dijon mustard, sugar, black pepper, and salt until well blended.
  3. Combine: Add the dressing to the vegetables and toss until everything is evenly coated. Fold in the chopped parsley.
  4. Chill: Cover the bowl and refrigerate for at least 1 hour to allow the flavors to develop.
  5. Serve: Stir well before serving and adjust seasoning as needed.
