Peel the potatoes and slice them into wavy slices using a corrugated cutter.
In a bowl, mix the olive oil with the sweet and hot paprika, garlic powder, oregano, salt, and pepper.
Add the potato slices and toss them well in the oil and spice mixture to ensure even coating.
Arrange them on a baking sheet lined with parchment paper, making sure the slices don’t overlap.
Bake in a preheated oven at 200°C (top/bottom heat; fan oven 180°C) for about 30–35 minutes, turning halfway through, until golden brown and crispy.
Finally, sprinkle with chopped chives to taste and serve with a garlic or herb dip.
