Deviled Eggs

See next page for more information. Boil eggs: Place eggs in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 to 12 minutes. Transfer to an ice-water bath and let cool for 10 to 15 minutes.

Peel and halve eggs: Once cooled, peel the eggs and halve them lengthwise.

Prepare filling: Place the yolks in a bowl. Add mayonnaise, mustard, hot sauce, pepper, and salt. Blend until smooth and creamy.

Fill the eggs: Spoon or piping bag to add the egg yolk mixture back to the egg whites.

Garnish: Sprinkle with paprika and chopped chives.

Serve or chill: Enjoy immediately or refrigerate until ready to serve.
