Duck breasts with honey for Christmas

Instructions:

Preheat the oven to 180°C.
Score the skin of the duck breasts crosswise to render the fat. Season with salt and pepper.
Heat the olive oil in a pan and sear the duck breasts skin-side down until golden brown. Then sear the other side briefly.
Place the duck breasts in a baking dish, skin-side up.
In a small bowl, combine the honey, soy sauce, minced garlic, grated ginger, and mustard. Pour the mixture evenly over the duck breasts.
Place the baking pan in the preheated oven and bake the duck breasts for about 15-20 minutes, or until they reach your desired doneness. The skin should be crispy.
Brush occasionally with the honey sauce during baking to keep the duck breasts moist.
Remove the duck breasts from the oven and let them rest briefly before serving. Garnish with fresh herbs.
Drizzle the remaining honey sauce over the duck breasts and serve.
