In a large bowl, whisk together the eggs and shredded cheddar cheese.
Add the cooked beef mixture to the egg mixture, stirring to combine.
Pour the mixture into a greased 9×13 inch baking dish.
Sprinkle the diced tomatoes and green bell peppers evenly over the top.
Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the top is golden brown.
Allow to cool slightly before slicing and serving.
