Ingredients:
300g pineapple chunks (fresh or canned, well drained)
250ml liquid full-fat cream (at least 30% fat)
100g sweetened condensed milk
2 gelatin sheets or 1 level teaspoon gelatin powder
2 tablespoons cold water (to rehydrate the gelatin)
A few sour cherries or candied cherries for garnish

Pure the pineapple:
Pure the pineapple in a blender until smooth. Reserve.
Hydrate the gelatin:
Soak the gelatin sheets in cold water for 10 minutes.
If using powdered gelatin, mix it with the water and let it swell.
🔥 Melt the gelatin:
Heat 2 tablespoons of pineapple puree (or a little water) in the microwave.
Add the squeezed-out or swollen gelatin and mix until completely dissolved.
🍶 Mix the bases:
In a bowl, combine the pineapple puree, sweetened condensed milk, and dissolved gelatin. Let cool.
🥄 Whip the cream:
Whip the cold, liquid cream until soft whipped cream forms.
Carefully fold it into the pineapple mixture with a spatula.
🧊 Spread and let cool:
Pour the mousse into glasses or a bowl. Smooth the top.
Refrigerate for at least 2 hours to allow the foam to set.
🍒 Garnish & Serve:
Just before serving, garnish with some sour cherries or candied cherries for a spicy kick.

Use pre-blended canned pineapple or 100% Fruit Pineapple Puree with no added sugar to save time.
