Filet Mignon with Sautéed Mushrooms & Red Wine Reduction

Ingredients
For the Filet Mignon:

4 filet mignon steaks (6 oz each, 1.5″ thick)
2 tbsp olive oil
2 tbsp unsalted butter
2 garlic cloves, smashed
2 sprigs fresh rosemary or thyme (optional)
Kosher salt & freshly ground black pepper
For the Sautéed Mushrooms:

2 tbsp unsalted butter
1 lb cremini or button mushrooms, sliced
1 garlic clove, minced
Salt & pepper to taste
1 tbsp fresh parsley, chopped (garnish)
For the Red Wine Reduction:

1 cup dry red wine (Cabernet Sauvignon, Merlot, or Pinot Noir)
½ cup beef broth (preferably low-sodium)
2 tbsp cold unsalted butter
1 tbsp fresh thyme (or 1 tsp dried)
Salt & pepper to taste
