Finely grate the peeled potatoes and carefully squeeze to remove excess water.
Mix with the egg, flour, and salt to form a smooth dough.
Form and cook the balls:
Form the mixture into small balls. Place them in boiling salted water and wait until the dumplings float to the surface. Then let it simmer for about 2 minutes and remove.
Prepare the sauerkraut and bacon:
Chop the sauerkraut into small pieces and warm it briefly in a pan.
Dice the bacon and onion. Fry in another pan until the bacon is nice and crispy and the onions are golden brown.
Serve:
Toss the potato dumplings with the bacon and onions. Serve with the hot sauerkraut.
