Ingredients for a Giant Paella (serves 10 to 12)
Seafood and protein:
1 kg fresh mussels
500 g whole shrimp
500 g squid rings
400 g white fish fillets (cod or hake), diced
500 g prawns or langoustines
300 g peas (fresh or frozen)
Rice and base:
1.2 kg round rice, special for paella
3 liters of fish stock (or homemade shrimp head stock)
4 ripe tomatoes, peeled and chopped
2 medium onions, sliced
2 red bell peppers, sliced
4 garlic cloves, chopped
200 ml dry white wine
1 dose of saffron or 1 teaspoon of turmeric for color
1 tbsp. 1 tbsp sweet paprika
Salt and pepper to taste
