Homemade lecho with zucchini in jars for the winter

Ingredients
(for about 6–8 jars, 500 ml each):

2 large zucchinis (about 1.5–2 kg)

2–3 bell peppers (red, yellow, or mixed)

2 onions

3 garlic cloves

1 kg tomatoes (or 2 cans chopped tomatoes)

2 tbsp tomato paste

3 tbsp oil

Salt and pepper to taste

1 tsp sugar

1 tsp sweet paprika (optional: hot or smoked)

Parsley or dill (optional)
