Honey-Glazed Pork Ribs with Roasted Vegetables

🧑‍🍳 Instructions
1. Prep the Ribs:

Preheat oven to 300°F (150°C).

Remove the membrane from the back of the ribs if not already done.

Rub ribs with salt, pepper, smoked paprika, garlic powder, and chili flakes.

Drizzle with olive oil and place on a foil-lined baking tray (meaty side up). Cover with foil.

2. Slow-Bake the Ribs:

Bake for 2.5 to 3 hours, until tender.

3. Make the Glaze:

While ribs bake, combine all glaze ingredients in a saucepan.

Simmer on low heat for 5–7 minutes, until slightly thickened. Set aside.

4. Roast the Vegetables:

Preheat oven to 425°F (220°C).

Toss all chopped vegetables with olive oil, salt, pepper, and herbs.

Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.

5. Glaze & Finish the Ribs:

Once ribs are tender, remove foil and brush with the honey glaze.

Increase oven to 425°F (220°C) and bake uncovered for 15–20 minutes, brushing with more glaze halfway through, until sticky and caramelized.

🍽️ Serving Suggestions

Plate ribs alongside the roasted vegetables.

Garnish with chopped parsley or green onions.

Serve with a side of garlic bread, coleslaw, or even a tangy cucumber salad.
