Preparation Instructions:
Peel and chop the potatoes, broccoli, carrots, and onion into small pieces.
In a bowl, toss the chopped vegetables with the olive oil.
In another bowl, combine the cornflour, herbs, garlic powder, pepper, and salt. Sprinkle this mixture over the vegetables and toss well to coat them completely.
Arrange the vegetables on a baking sheet, cover with aluminum foil, and place in a preheated oven at 200°C (400°F).
Bake for approximately 30 to 40 minutes, until tender and cooked to your liking.
If you prefer to roast them in a skillet:
Heat a skillet over high heat for 30 seconds, then reduce the heat to medium-low.
Spread the vegetables evenly in the skillet, cover, and cook for 15 to 20 minutes.
After this time, turn the vegetables over and cook for another 15 to 20 minutes, until tender.
