Preheat oven to 200°C (top/bottom heat) or 180°C (fan oven).

Halve the tomatoes and place them in an ovenproof dish, cut-side up.

Peel and thinly slice the garlic and sprinkle over the tomatoes.

Drizzle with olive oil, then drizzle with honey/sugar.

Sprinkle with herbs and season with salt and pepper.

Into the oven: Bake for about 25–30 minutes, until the tomatoes are soft and lightly caramelized.

Optionally, serve with a drizzle of balsamic vinegar or freshly grated Parmesan cheese.
