Lazy Mini Tacos

Instructions:
Preheat Oven & Prep Trays: Preheat your oven to 375°F (190°C). Prepare two parchment-lined sheet trays for baking.
Prepare Refried Beans: In a small saucepan, combine the 1 cup refried beans with 1/4 cup of water. Heat over medium-low heat, stirring occasionally, until the beans start to bubble and are heated through and slightly loosened. Remove from heat and let cool slightly for easier spreading.
Cook Taco Meat: Heat a preheated skillet over medium-high heat. Add the 2 tablespoons olive oil. Open the package of 1 lb. ground beef. Sprinkle about half of the 2 tablespoons taco seasoning directly onto one side of the beef while it’s still in the package. Transfer the seasoned side down into the hot skillet. Sprinkle the remaining taco seasoning over the top of the beef in the skillet. Cook, breaking up the meat with a spatula, until the ground beef is browned and cooked through. Drain any excess fat.
Assemble Mini Tacos: Lay the 24 tortilla chip rounds out on the prepared parchment-lined sheet trays. On each tortilla chip, spread a teaspoon or two of the warm refried beans to coat the chip. Follow with approximately one tablespoon of the cooked, seasoned ground beef on top of the beans. Finish each mini taco with a generous sprinkle of the 8 oz. grated Colby cheese.
Bake: Place both trays in the preheated oven and bake for 6 – 8 minutes, or until the cheese is completely melted and bubbly.
Fold & Serve: Remove the trays from the oven. Immediately and gently fold each mini taco in half while still warm and pliable. They will hold their shape as they cool slightly. Enjoy your Lazy Mini Tacos warm, served with your favorite salsa and sour cream on the side.
