Instructions:
1. Preheat oven to 400Β°F (200Β°C).
2. Prepare meatballs: Mix together chicken, ricotta, Parmesan, egg, lemon zest, garlic, salt, and pepper. Form into balls and bake for 15-20 minutes or until cooked through.
3. Cook orzo: Bring chicken broth to a boil, add orzo and cook until tender. Stir in garlic and spinach.
4. Serve meatballs over garlic spinach orzo and enjoy!
