In a saucepan over medium heat, combine all sauce ingredients. Simmer for 10–15 minutes until thickened, stirring occasionally. Taste and adjust seasoning (add more maple for sweetness or vinegar for tang).
2. Prep the Chicken:
Pat chicken dry and season with salt and pepper. Lightly brush with olive oil.
3. Cook the Chicken:
Grill: Preheat grill to medium-high. Grill chicken for 6–7 minutes per side, brushing with BBQ sauce during the last few minutes.
Oven: Preheat oven to 400°F (200°C). Place chicken on a baking sheet, bake for 20–25 minutes, basting with sauce halfway through.
Stovetop: Sear chicken in a skillet over medium-high heat until browned, then reduce heat, cover, and cook through (or finish in oven).
