In a large bowl, mix olive oil, lime juice, garlic, cumin, paprika, chili powder, oregano, salt, and pepper. Add chicken cubes and toss to coat. Cover and marinate for at least 30 minutes (or up to 4 hours in the fridge).
Thread marinated chicken pieces onto skewers.
Preheat grill or grill pan to medium-high heat. Cook skewers for 10-12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
Serve hot with lime wedges and fresh coriander.
