Heat olive oil in a pan over medium heat.
Sauté the chopped onions until soft, then add garlic and cook for 1 minute.
Add minced meat, breaking it up as it browns.
Stir in grated carrot (if using), tomato paste, and all the herbs and spices.
Pour in the stock, reduce heat, and simmer until most of the liquid is absorbed (about 10–15 mins).
Taste and adjust salt and pepper. Let cool.
Assemble the pies:
Preheat oven to 200°C (400°F).
Roll out pastry and cut into circles for small pies (or line a pie tin for a large pie).
Spoon the cooled meat mixture onto the pastry.
Cover with another piece of pastry (or top crust), seal the edges, and crimp with a fork.
Brush with beaten egg.
Bake:
Bake for 20–25 minutes or until golden and crispy.
