Prepare the homemade fries 🍟
Peel and cut the potatoes into sticks. Soak them in cold water for 10 minutes. Drain, dry well, then fry them in two batches (160°C then 180°C). Sprinkle with fleur de sel, parsley, and garlic or Parmesan cheese if desired.

Cook the mussels 🦪
Heat the oil in a large saucepan. Add the shallot and garlic, and sauté without browning. Add the mussels and white wine, cover, and cook over high heat for 5-6 minutes until the shells open.

Finish the sauce 🍶
Reduce the heat, add the cream and mustard. Season with pepper and stir gently. Add the chopped fresh parsley.

Serve in a large bowl or tray, mussels on one side, crispy fries on the other. Drizzle lightly with cream sauce for an irresistible gourmet effect.
