My husband can’t get enough of these; he always wants seconds.

Preheat your oven to 375°F (190°C).
Cut the bell peppers in half lengthwise and remove the seeds and membranes.
Brush the outside of the bell peppers with olive oil and place them in a baking dish, cut side up.
In a small bowl, mix the pizza sauce with Italian seasoning, salt, and pepper.
Spoon a generous amount of the pizza sauce mixture into each bell pepper half.
Sprinkle a layer of mozzarella cheese over the sauce, followed by a few slices of pepperoni.
Top with a little more mozzarella and a sprinkle of Parmesan cheese.
Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the cheese is bubbly and golden brown.
Remove from the oven and let cool slightly before serving. Garnish with fresh basil leaves if desired.
Variations & Tips
For a vegetarian version, skip the pepperoni and add sliced mushrooms, olives, or spinach. You can also experiment with different cheeses like cheddar or provolone for a unique flavor. If you prefer a spicier kick, add a pinch of red pepper flakes to the sauce. For a more substantial meal, mix in some cooked ground turkey or beef with the sauce before stuffing the peppers.
