Heat oil or clarified butter in a pan.
Fry the chicken over medium heat for about 4–5 minutes per side, until golden brown and cooked through.
4. Garlic sauce:
Melt the butter in a small saucepan.
Sauté the garlic briefly (do not let it brown!).
Deglaze with cream and stock, bring to a boil.
Stir in the Parmesan and let it melt.
Season with salt, pepper, and lemon juice, if desired.
Let it reduce slightly if necessary – it should be nice and creamy.
