Sausage, Peppers & Onions Skillet
This quick and flavorful skillet dish combines pre-cooked chicken or turkey sausage with tender onions and bell peppers, all seasoned with Italian herbs and a splash of balsamic vinegar.
Ingredients:
Yellow onions, peeled and sliced into rings – 6 cups (~1½ large onions)
Large bell peppers, sliced about ¼ inch thick – 2 (4 cups)
Fully cooked reduced-fat chicken or turkey sausages – 1 package (12 oz, 4 sausages)
Olive oil, divided – 3 tsp
Dried oregano – ¼ tsp
Dried basil – ¼ tsp
Salt and freshly ground black pepper – to taste
Fresh garlic, minced – 2 tsp
Balsamic vinegar – 1 tbsp
Cooking spray – as needed
Instructions:
Step 1: Soften the Veggies
Place the sliced onions and bell peppers in a large microwave-safe bowl. Microwave on high for 8–10 minutes, until soft.
Step 2: Brown the Sausage
Slice the sausages into thin rounds (~¼ inch thick). Coat a large nonstick pan with cooking spray, add the sausage slices, and cook until lightly browned, about 5 minutes. Stir frequently. Transfer to a plate.
