Potato, Tuna, Egg Salad with Lemon and Herb Vinaigrette!

✅ Ingredients:
For the Salad:

500g (1 lb) baby potatoes, halved

2 eggs

1 can (150g–200g) good quality tuna in olive oil or water, drained

1 small red onion, thinly sliced (optional)

A handful of cherry tomatoes, halved (optional)

Fresh parsley or dill for garnish

Salt & pepper, to taste

For the Lemon-Herb Vinaigrette:

3 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

1 tsp Dijon mustard

1 small garlic clove, finely minced or grated

1 tsp fresh chopped herbs (parsley, dill, chives, or basil)

Salt & pepper to taste
