Protein-packed cheesecake with summer fruits (with Skyr)

Preheat the oven to 180°C (350°F).

Briefly mix the skyr, eggs, erythritol, pudding powder, vanilla extract, and optionally cornstarch in a bowl – stir just until smooth.

Pour the batter into a baking dish (approx. 20×25 cm) lined with parchment paper or greased.

Spread the fruit evenly and press it in lightly.

For Bake for about 35–40 minutes, until the center is firm and the edges are golden brown.

Let cool completely and then refrigerate for at least 2 hours.
