1. Preheat the oven to 200°C. Wash the potatoes thoroughly and cut them into equal-sized pieces. Place them in a large bowl, add 2 tbsp olive oil, salt, pepper, and oregano, and mix well.
2. Spread the seasoned potatoes on a baking sheet and bake in the oven for about 25 minutes, until golden brown and crispy.
3. While the potatoes are roasting, place the feta in a small baking dish. Peel the garlic cloves, gently press them down, and scatter them around the feta. Drizzle with the remaining olive oil.
4. When the 25 minutes are up, place the casserole dish with the feta and garlic in the oven along with the potatoes. Let everything bake for another 15 minutes, until the feta is nice and soft and looks lightly browned.
5. Remove the potatoes and feta from the oven. Carefully crumble the feta and toss it with the freshly roasted potatoes.
6. Finally, sprinkle some fresh parsley over the dish and serve immediately. Enjoy!
