Instructions
Step 1: Soften the Vegetables
Place the onions and bell peppers in a large microwave-safe bowl. Microwave on high for 8–10 minutes, until softened.
Step 2: Brown the Sausage
Slice the sausages into ¼-inch pieces. Heat a large nonstick pan with cooking spray, add the sausage, and cook until lightly browned, about 5 minutes, stirring often. Remove to a plate.
Step 3: Sauté the Veggies
Re-coat the pan with cooking spray and add 2 tsp olive oil. Add the microwaved onions and peppers, oregano, basil, salt, and pepper. Cook over medium-high heat, stirring frequently, until slightly caramelized, about 10 minutes. (Tip: If dry, add the remaining 1 tsp olive oil and 2 tbsp water.)
Step 4: Combine
Add the minced garlic and cook for 1 minute until fragrant. Return the sausage to the pan and stir in balsamic vinegar. Mix and cook until everything is warmed through, about 2 minutes.
Step 5: Serve
Transfer to a platter and serve with mustard, toasted bread, or rolls if desired.
