Peel the apples, core them, and cut into 1 cm thick rings.
Mix the flour, egg yolks, beer, salt, brown butter, and a little seasoning into a batter.
Beat the egg whites with the sugar until stiff peaks form, then fold in.
Dip the apple rings into the batter and bake in hot clarified butter (approx. 180°C) until golden brown.
Drain briefly, toss in the cinnamon-sugar, and serve immediately.
