For the Grits:
1 cup stone-ground grits (not instant or quick)

4 cups water (or half water, half milk for creaminess)

1 tsp salt

2 tbsp butter

1 cup shredded sharp cheddar cheese (optional but great)

For the Shrimp:
1 lb shrimp, peeled and deveined (tail-on or off)

4 slices bacon, chopped

1 small onion or 2 shallots, finely diced

2 cloves garlic, minced

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (adjust to taste)

Juice of 1/2 lemon

2 tbsp chopped parsley or green onion for garnish

Salt & pepper to taste
