- In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the sliced steak, season with salt and black pepper, and cook until browned and done to your liking. Transfer the steak to a plate and set aside.
- In the same skillet, melt the remaining 2 tablespoons of butter. Add the halved baby potatoes in a single layer. Sprinkle the garlic, thyme, rosemary, salt, and pepper over the potatoes.
- Cook the potatoes, stirring occasionally, until golden brown and tender, about 15–20 minutes.
- Return the cooked steak to the skillet and toss everything together for a couple of minutes so the flavors combine.
- Remove from heat and garnish with freshly chopped parsley.
