1. Slow Cooker Roast Beef:
Season the meat with salt and pepper.
Add everything to the slow cooker: broth, onions, garlic, Worcestershire sauce, soy sauce, and thyme.
Cook on LOW for about 8 hours or on HIGH for 4–5 hours, until the meat is falling apart.
Remove the meat, shred it, and reserve the liquid (sif necessary, strain it through a sieve).
2. Pepper and Onion Mix:
Sauté the peppers and onions in a pan with a little oil until soft and lightly browned.
3. Build the Sandwich:
Spread the bread with butter or mayo (outside).
Inside: One slice of cheese, then the roast beef, then the pepper and onion mix, another slice of cheese, and then the bread lid.
Grill in the pan over medium heat until golden brown until the cheese melts.
4. French Dip:
Pour the warm liquid into small bowls and dip the sandwich in it – just like a classic French dip sandwich.

You can also use a crusty baguette instead of bread.
Add spicy mustard or aioli to the sandwich for extra flavor.
