Strawberry Funnel Cake

In a saucepan, combine sliced strawberries, ½ cup sugar, and lemon juice. Cook over medium heat until strawberries release juices.
Stir in cornstarch mixture and cook until thickened. Remove from heat and set aside.
In a large bowl, whisk together flour, baking powder, salt, and sugar.
In another bowl, whisk eggs, milk, vanilla, and melted butter. Gradually add to dry ingredients, mixing until smooth.
Heat vegetable oil in a deep skillet or pot to 375°F (190°C).
Pour batter into a squeeze bottle or funnel, then drizzle in a circular motion into the hot oil. Fry until golden brown on both sides, about 2–3 minutes per side.
Drain on paper towels.
Top warm funnel cake with strawberry topping, dust with powdered sugar, and drizzle with strawberry syrup. Add whipped cream or ice cream if desired.
