PREPARING THE STUFFED ANCHOVIES

The first thing to do when preparing stuffed anchovies is to clean them, removing the head and all bones, and then open them in the classic book shape.

Cut the mozzarella into slices. The length of the slices depends on the length of the anchovies, so that they do not protrude from the body.

Take an open anchovy and place a slice of mozzarella in the center and a half slice of cooked ham folded over itself.

Finish with another anchovy.

Press lightly to compact.

Then coat them first in flour, then in the beaten egg with salt and pepper, and finally in the breadcrumbs.

Meanwhile, place a high-sided skillet on the stove with plenty of peanut oil. When it’s hot, begin frying the anchovies, taking care to submerge them in the oil so they seal and the mozzarella doesn’t leak.

They should be perfectly golden.

Arrange them one by one on paper towels and then on the serving platter.
