The Authentic Stuffed Tomatoes Very Delicious

Ingredients (Serves 4–6):
6 large ripe tomatoes

2 medium potatoes (optional, peeled and cut into wedges)

1 cup uncooked rice (short or medium grain works best)

1 large onion, finely chopped

2–3 garlic cloves, minced

1/2 cup fresh parsley, chopped

1/4 cup fresh mint, chopped (or 1 tsp dried mint)

1/3 cup olive oil (plus extra for drizzling)

Salt & pepper to taste

1 tsp sugar (optional, for sweetness)

1/2 tsp cinnamon (optional, for depth)

1/2 cup tomato pulp (from the tomatoes you hollow out)

Juice of 1/2 lemon

Optional: 2 tbsp pine nuts or raisins (for added sweetness)
