Heat the olive oil in a large skillet over medium heat.
Peel the sausage out of the skin and add it to the skillet. Fry until crumbly and cooked through and lightly browned.
Add the onion and garlic and cook until the onion is soft and translucent.
Add the tomatoes, tomato paste, oregano, basil, thyme, and sugar.
Stir everything well and simmer over medium-low heat for about 20-30 minutes to allow the flavors to blend.
Season with salt, pepper, and chili flakes, if desired.
This sauce pairs perfectly with pasta, especially spaghetti or penne.
