Mac ‘n Cheese Muffins

🧀 Ingredients:
8 oz (about 2 cups) elbow macaroni

2 tbsp butter

2 tbsp all-purpose flour

1 cup milk

1 ½ cups shredded sharp cheddar cheese (divided)

½ cup grated Parmesan cheese

1 large egg, lightly beaten

½ tsp salt

¼ tsp black pepper

½ cup breadcrumbs (optional topping)

Nonstick cooking spray

🥣 Instructions:
Cook Pasta

Preheat oven to 375°F (190°C).

Boil macaroni in salted water until al dente. Drain and set aside.

Make Cheese Sauce

In a saucepan, melt butter over medium heat. Stir in flour and whisk for about 1 minute.

Gradually add milk, whisking constantly until smooth and thickened (about 3–5 minutes).

Stir in 1 cup of cheddar and all of the Parmesan. Mix until melted and smooth.

Season with salt and pepper.
