For the Honey Glaze:
1/3 cup honey
2 tbsp soy sauce
2 tbsp ketchup
1 tbsp Dijon mustard
1 tbsp apple cider vinegar (or rice vinegar)
2 cloves garlic, minced
1 tsp grated fresh ginger (optional)
For the Roasted Vegetables:
3 medium carrots, peeled and chopped
2β3 red potatoes or sweet potatoes, cubed
1 red onion, sliced
1 zucchini, sliced
2 tbsp olive oil
Salt, pepper, and dried herbs (like thyme or rosemary)
